LUCCA M58 Sunto Espresso Machine: Setup Guide

Congratulations on your new LUCCA M58 Sunto Espresso Machine. In this guide, you should find everything you need to set up and operate your dual-boiler, rotary pump, E61 espresso machine.

Step 1: Inspect the Machine

  1. Remove the machine from the box and place it on a stable, level surface.
  2. Before turning on the machine, inspect for any shipping damage. If you notice damage, contact us immediately.
  3. Save all packaging. It is required for returns and repairs.

Step 2: Water Quality and Plumbing

Before introducing any water to the machine, test your water to confirm it meets our requirements.

  1. Test your water. We recommend a TDS between 35–85 ppm (ideally below 50 ppm). For more on water, visit our page on water.
  2. If direct plumbing: Fasten the included braided water line to the pump inlet on the bottom of the machine, hand-tight, then a quarter turn with an adjustable wrench. Open the water line and check all connections for leaks. Ensure line pressure is 30–45 PSI. Install a pressure regulator if you are unsure of your supply pressure. 
  3. To configure the M58 Sunto for direct plumb operation, you need this braided water line and, for most configurations, this 3/8" to 3/8" quick-connect fitting. A plumbing kit that bundles what you need is forthcoming.
  4. If using the reservoir: Fill the 3L reservoir with filtered and softened water, leaving a few inches at the top. Do not spill water on top of the machine.

Step 3: Configure Water Source in the OLED Menu

The M58 Sunto uses an OLED PID display rather than the toggle switches found on the original M58. You will set your water source in the menu.

  1. Plug in the machine and flip the power switch to ON.
  2. Once the display lights up, press and hold the up arrow button for 10 seconds to enter the settings menu.
  3. Navigate right through the menu screens (right arrow button) until you reach WATER TANK.
  4. Set WATER TANK to YES if using the internal reservoir, or NO if direct plumbed. Use the left arrow button to toggle the value.
  5. Press the right arrow button to continue through the menu and exit, or simply wait — settings save automatically after a few seconds.

Only set WATER TANK to NO if the direct plumb kit is physically installed.

Step 4: Fill Boilers and Warm Up

The M58 Sunto has a dedicated group head heating element that brings the machine to brew temperature approximately 40% faster than standard E61 machines — typically around 12 minutes.

  1. With the machine on, it will automatically begin filling and heating the boilers.
  2. Important: Lift the brew lever until water flows from the group head to ensure the brew boiler is completely full. Missing this step could result in damage to your brew boiler.
  3. The OLED display shows both boiler temperatures. A heating symbol appears next to each while they warm up.
  4. Once the brew boiler reaches its target temperature (default 93°C / 200°F), lift the brew lever until water flows from the group head. This ensures the brew boiler is completely full.
  5. On first use, run approximately 0.5 liters of water through the group head to flush the circuit before pulling your first shot.
  6. You may need to fill the water reservoir again after initial startup. 

Step 5: Dialing In

  • If your shot pulls too fast or gushes, you need to make an adjustment on your grinder in the fine direction (usually clockwise on stepless adjustment grinders and lower numbers on stepped grinders). NOTE: When making a grind adjustment in the fine direction, you are pulling the burrs closer together. It's crucial to grind a little coffee while adjusting in the fine direction to avoid jamming your grinder. Make incremental adjustments. 
  • If your shots pull too slowly or no liquid comes out after a long time lapse, you must make an adjustment to make your grind coarser. Make incremental adjustments. If your shot is still pulling too slowly, make another adjustment. Repeat. 

Step 6: Pull Your First Shot

  1. Grind your coffee, dose and tamp it into the portafilter.
  2. Lock the portafilter into the group head by rotating it counter-clockwise.
  3. Position cups under the portafilter spouts.
  4. Lift the brew lever to the vertical position to start the shot. The OLED shot timer will begin counting seconds. If pre-infusion is enabled, the machine will pre-wet the puck before full pressure begins. This counts toward your total shot time.
  5. Lower the lever to stop the shot. The OLED returns to displaying boiler temperatures after a few seconds.

Step 7:  Steaming Milk

  1. After about 15 minutes, the Drive’s steam boiler is pressurized and ready to steam milk and purge hot water.
  2. To activate the steam wand, move the joystick down until it clicks into place. 
  3. You’re now ready to steam milk!

    A Few Tips Before You Go

  • Brew temperature: Adjust directly from the home screen by pressing either side button. Recommended range is 195–203°F (90–93°C). Use lower temperatures for darker roasts and higher for lighter roasts.
  • Steam boiler temperature: Set it at its maximum by default. We recommend leaving it there for best steaming performance. It can be adjusted in the OLED menu under SERVICE TARGET.
  • Auto shut-off: Set ECO or Standby timers in the OLED menu to reduce energy use when the machine is idle. See the User Manual for full details.
  • Pre-infusion: Enable and set duration (0–10 seconds) in the OLED menu under PREINFUSION. Great for gently blooming lighter roasts.
  • Screen saver: The OLED turns off after 30 minutes without activity. Press either side button to wake the display.
